CreamyChunky Cucumber & Avocado Soupdip

1 Cucumber - peeled and deseeded and chopped
1/2 Avocado - chopped
squirts of lime juice
a sprinkle of salt
4 or 5 grinds of freshly ground black pepper
1 teaspoon or so of ginger puree


blend all the ingredients together. done.


Adapted from Goop's recipe, the ginger gives it an extra zing and the freshly ground pepper a little kick. there aren't many ingredients so it was a little difficult to blend with an immersion blender so it wasn't as creamy as a soup should be and I ended up eating it with a crunchy carrot as a dip which also worked nicely.


serves one as a soup or a couple for dipping with fresh vegs.
