so, it only took me 4 days to finish writing about our 11 day holiday. i'll have to learn and improve for the next trip. which is next monday.
lots of laundry later, everyone seems to be back and settled in a little bit again for school to start tomorrow. popi, arina and i made a late sunday lunch together today. both super easy.
caramelized broccoli with lotsa garlic, crushed red pepper, squirts of lemon and freshly grated parmesan:
cut the broccoli heads off and split in half. place the cut sides down onto a pan and drizzle with extra-virgin olive oil. i like to peel the stems, slice them slim and crunch on them raw while cooking. slice a couple cloves of garlic - at least four - and add to the pan. the more the merrier. then try to figure out the european oven - i used the two lines which i think means the heat comes from the top and the bottom rather than the squiggly line which i think means the broiler and turned it to about 200C. sounds good. cook the broccoli until they are browned and crispy. the crispier the better. then sprinkle some crushed red pepper flakes (note: if crushing the dried pepper yourself, make sure to wash your hands and not tough your eyes afterwards), a few squirts of fresh lemon drizzled over and some grated parmesan that will slowly melt on top. oh, and a little sea salt too.
also made a salad with whatever vegetables were in the fridge: mixed greens, tomatoes, cucumber, carrots, red onion. healthiness.
penne with gorgonzola, sun-dried tomatoes and spinach:
cook the penne accordingly. in a pan, heat some extra virgin olive oil and add some sliced sun-dried tomatoes. add the spinach and stir until it wilts. then add the chunks of gorgonzola and blend together until it is creamy goodness on low heat. if you like it reaaallyy creamy, arina would suggest adding panna to it, but both popi and i were opposed :) then add in the pasta. voila. sprinkle with some freshly ground black pepper and freshly grated parmesan (36 months). also tastes really good with chicken.
finished the meal with a greek coffee and a biskotoloukoumo and it was perfect. although i could've eaten three more of those. but probably even more perfect that i didn't.
